Grown at El Proceso in Planadas, Tolima, this 100% Red Bourbon coffee undergoes an advanced honey process. Yeison’s organic farming practices help protect the water and forests of the nearby páramo, using farm-made compost, natural biofertilisers, ground cover and shade trees.

Each box contains six individually wrapped, nitrogen-flushed steep bags, with 13g of roasted ground coffee in each bag. All you need is a mug and hot water.

Place a steep bag in your mug and fill halfway with hot water. Gently move the bag through the water for 10 seconds, then top up your mug. Steep for 3–5 minutes, adjusting to taste. For a stronger brew, leave the bag in while you drink.

In the upper reaches of Planadas, Tolima, where coffee-growing land meets the páramo ecosystem, Yeison Vargas farms with a strong sense of responsibility for the surrounding environment. His farm, El Proceso, reflects the patience and care he brings to every stage of production.

Part of a traditional coffee-growing family, Yeison is the brother-in-law of our long-term producer partner Jorge Rojas. He continues that family’s work in organic specialty coffee while developing his own approach to cultivation and processing.

El Proceso sits at around 2,000 metres above sea level, close to the páramo—a high-altitude Andean ecosystem that plays an important role in the region’s water supply. For Yeison, farming beside this landscape carries an additional responsibility to protect its water sources and forests. That responsibility motivated his transition to fully organic agriculture.

The farm uses compost made on site, vermiculture and natural fertilisers produced in his local biofábrica. Permanent plant cover protects the soil, helps retain organic matter and reduces erosion. Forest areas and shade trees are maintained as part of the farm’s wider ecosystem.

Yeison sees agriculture as part of that ecosystem. The cool climate and frequent fog associated with the nearby páramo allow cherries to mature slowly, contributing to the coffee’s complexity. His farming practices aim to preserve these conditions while supporting the long-term health of the land.

This 100% Red Bourbon lot undergoes an advanced honey process, including an extended 70-hour aerobic whole-fruit fermentation. The process develops the coffee’s sweetness and body, producing a rich, fruit-driven cup with notes of guava and blood orange.

Through his coffee, Yeison hopes to convey a sense of where it was grown: the freshness of the mountains, the care taken during processing and the respect with which the land is cultivated.
