Kayon Mountain Farms is a family-owned coffee estate in the Shakiso district of Guji, southern Ethiopia. Established in 2012 by Ismael Hassen Aredo and his family, the farms extend across more than 500 hectares of fertile highland terrain, between the villages of Shakiso and Sewana.

Approximately 300 hectares are dedicated to organic coffee cultivation, with much of the remaining land preserved as forest and indigenous vegetation. Coffee trees grow beneath a natural canopy of acacia and other native species, providing shade while supporting the biodiversity of the surrounding landscape.

Ismael and his family have developed the farms around organic agricultural practices, using natural compost and maintaining an on-site nursery to cultivate additional trees. This approach reflects a commitment to producing exceptional coffee while protecting the environment in which it grows.

Kayon Mountain also provides employment for permanent and seasonal workers from surrounding communities, with initiatives including transport assistance and support for local infrastructure.

Both washed and natural coffees are produced at the estate, with careful attention to harvesting, sorting and processing. The resulting coffees are recognised for their clarity, sweetness and expressive fruit character, qualities that have made Guji one of Ethiopia’s most celebrated specialty coffee origins.

Kayon Mountain is located in the highlands of Guji, where coffee grows at elevations of approximately 1,950–2,200 metres above sea level.

The farms cultivate indigenous Ethiopian heirloom Arabica varieties under the shade of native trees. Organic agricultural practices include the use of natural compost and an on-site nursery, supporting the continued cultivation of trees across the estate.

For this washed process coffee, ripe cherries are carefully harvested and depulped before undergoing fermentation to remove the remaining fruit mucilage. The coffee is then washed and dried on raised beds, allowing the parchment to dry gradually before milling and export.

Careful processing helps preserve the clarity, delicate sweetness and lively acidity characteristic of washed coffees from this region.
